Summer Corn Salsa
Bring this to your next party and you will be everyone's favorite. Or eat it all yourself. I have done both. Ha!
Recipe
10oz bag of super sweet white corn (thawed) or 4 grilled cobs and then cut
2 avocados
1/4 purple onion
1 jalapeño
1/4 cup cilantro
1 tbsp lime juice + salt and pepper to taste
1-2 tbsp mayo
1/2 tsp Everything but the Elote seasoning blend from Trader Joe’s
